Cut from the breast so low/slow cooking, smoking, braising.  Slow cooking breaks down the gristle to collagen to provide a delicious rich & beefy, flavorful result.  The grain all goes in the same direction so carving is easier that the chuck

Only 4 per beef so when they are gone, they are gone to our next harvest.

Cattle born & raised on Old Time Farm.  100% Grass Fed & Grass Finished on pasture.

Vacuum packed and flash frozen right after cut by butcher for freshness.
