
Unstuffed Peppers
We love stuffed peppers but I just don't have the time or energy for the fuss that comes with making them from scratch.
This delicious one-pot 30 minute meal has replaced traditional stuffed peppers in our house forever.
I used jasmine rice, poblano peppers, sweet onion, and smoked paprika this week and it took this recipe to a whole new level.
Ingredients
2 tablespoons olive oil
1 pound ground beef
1 cup white rice
1-8 oz can tomato sauce
3 medium bell peppers chopped
1 medium onion diced
3 garlic cloves minced
3 cups stock or water
1 teaspoon paprika
salt & pepper to taste
4 ounces grated cheddar cheese
Directions
Brown ground beef.
Add olive oil, onions, and peppers and saute until beginning to soften, about five minutes.
Add minced garlic and rice and saute two more minutes.
Add the stock or water, tomato sauce, and paprika and stir to combine.
Bring to a simmer. Cover pot and simmer, covered, for 20 minutes stirring occasionally.
Taste for seasoning and to be sure rice is cooked. Add salt & pepper to taste. If the rice is still crunchy add 1 cup of water, cover, and cook another 10 minutes or until rice is tender.
Sprinkle cheese on the top.
