
Quick & Easy Unstuffed Cabbage Rolls

I LOVE cabbage rolls but who has time to mess with the blanching & rolling & stuffing when you can have dinner on the table and only one pot to clean in about 30 minutes?
Ingredients
2 tablespoons olive oil
1 pound Old Time ground beef
1 cup white rice (I use Jasmine rice)
1-8 oz can tomato sauce
1/2 medium head of cabbage chopped
1 medium onion diced
3 garlic cloves minced
3 cups stock or water
salt & pepper to taste
Directions
Brown ground beef.
Add olive oil, onions, and cabbage and saute until beginning to soften, about five minutes.
Add minced garlic and rice then saute two more minutes.
Add the stock or water, tomato sauce, and stir to combine.
Bring to a simmer. Cover pot and simmer, covered, for 20 minutes stirring occasionally.
Taste for seasoning and to be sure rice is cooked. Add salt & pepper to taste. If the rice is still crunchy add 1 cup of water, cover, and cook another 10 minutes or until rice is tender.
PS ... to change to Cabbage Roll Soup, add 1 more cup of water or broth, an additional 16 oz of tomato sauce, reduce rice to 1/2 cup and put in a larger pot.
