Fat from the back of the hog. Frozen.

A staple in southern cooking, it can be used to slow cook to release the fat (render) into a cooking fat & cracklins' or make into salt pork. 

Fat from pasture-raised pigs contain vitamins A, D, E & K as well as a higher ratio of Omega 3 (anti-inflammatory) fatty acids than conventional pork.

Slow-growing hogs from Auburn Meadow Farm are fed non-GMO grains and raised from birth to harvest on pasture by Jackie in West Middlesex, PA.
