Rich chicken flavor, long legs, long thighs and proportional breasts are all hallmarks of slow-growing Heritage chicken.

Stewing hens are older than our roasting birds when harvested and are best cooked for soup or stew but can also be cooked with a long slow moist cooking method (like a crockpot) or in an InstantPot.  They are fully cooked when the legs are loose and wiggle.
