Instant Pot Short Ribs with Grandma Ruth's BBQ sauce

Finger-licking good, tender short ribs with my Great Grandma Ruth's BBQ sauce.

Ingredients:

  • 2 lb Old Time Short Ribs
  • 1 tbsp light olive oil (or other light cooking oil)
  • 1 cup water or beef stock
  • Kosher salt
  • pepper
  • 1 cup (or so) of Grandma Ruth's Homemade BBQ Sauce (see below) or store-bought

Grandma Ruth's Homemade BBQ Sauce:

  • 1 cup ketchup
  • 1 tbsp brown sugar
  • 1 tbsp Worcestershire sauce

Mix together & then correct the flavor to your taste (great thing to get kids involved with).  If you want it sweeter, add more sugar.  If you want more tang, add more Worcestershire.

Directions:

  1. Thaw short ribs.
  2. Heat Instant Pot saute function.
  3. Generously salt & pepper short ribs on both sides.
  4. Add oil to Instant Pot and brown the ribs on all sides (do in batches if you need to).
  5. Add ribs and water to pot. Pressure cook for 45 minutes then do a 15 minute natural release.  
  6. The meat should be falling off the bone when they are done.
  7. Remove ribs from Instant Pot and put in oven safe dish
  8. Brush BBQ sauce onto meat.
  9. Put under the broiler in oven to carmelize the BBQ sauce & then serve!

Note: you can cook these in the slow cooker instead ... cook for about 7-8 hours or until meat falls off the bone.
